Replaceable-blade knives

A replaceable-blade knife does not get sharpened. When the edge goes, you pop the blade out and click a new one in, and the knife is factory-sharp again. On a big animal that is the difference between one knife and three, or between stopping to strop and simply carrying on.

What you gain

An edge sharper than you can produce on a stone, available on demand, in a package that usually weighs less than a comparable fixed blade — the lightest here is the Gerber Vital Pocket Folder at 1.3 oz.

What you give up

Lateral strength. A scalpel blade is ground thin enough to flex and will snap if you twist it in a joint — and a snapped blade in a carcass is a genuine hazard. You also carry consumables, and you cannot fix a dull blade with a stone if the box runs out.

The blade systems

The blade you are committing to matters more than the handle. These are not interchangeable between makers.

Havalon Piranta (#60A / #60XT)

A true surgical scalpel blade in a folding handle. The #60A is the thicker of the two common Piranta blades — Havalon rates it around 20% thicker than the older #60XT — and it is still far thinner than any sharpenable knife edge. That thinness is the entire point: it parts hide with almost no pressure. It is also why the blade snaps rather than bends if you lever with it.

Not a scalpel. These are stamped 420J2 blades around 0.024 inch thick — roughly three times a scalpel blade — held in a full-size handle. You give up a little of the scalpel's effortless slicing and get back a blade that tolerates being twisted, which is the trade most hunters actually want.

The pocket Vital takes a standard #60 scalpel blade; the Big Game folder uses a much larger 3.75-inch stamped blade in Gerber's own Split Sec carrier. Two quite different tools sharing a name.
