Benchmade Meatcrafter 15500-04
A 6.09" trailing-point butchering blade in CPM-154, the Santoprene-handled Meatcrafter now replaces the S45VN original at $200. The long, narrow profile is for deboning and quartering, and it weighs just 3.24 oz. It is a processing knife first; the thin blade is not meant for prying joints apart.

Why a trailing point
The spine sweeps upward so the tip finishes above the spine line, giving an unusually long, deep belly. That belly is everything for skinning and filleting: it keeps the edge in contact through a long slicing stroke.

Powder-made 154CM: same chemistry, finer grain, tougher in practice.
1-5 is a relative ranking drawn from published composition and hardness, not a lab measurement. Higher is better on every axis, and no steel is a 5 across the board — edge retention and toughness pull against each other. All CPM-154 knives
