Which knife steel survives a wet sheath?

Look for MagnaCut, LC200N, or any steel our reference table rates 4 or 5 for corrosion resistance. Blood is salty and a leather or kydex sheath traps moisture against the blade for days — that combination rusts carbon steel and even stains some tool steels.
The sheath is the problem, not the weather
A blade that gets rained on and dried is fine. A blade put away damp and left for a week in a sheath that holds moisture against one side is how pitting starts. Leather is worse than kydex here because the tanning residues are mildly acidic.
What to buy
MagnaCut is the current answer for a hunting fixed blade. LC200N is effectively rustproof and shows up on saltwater knives for that reason, trading edge retention for the immunity. Among the value steels, 14C28N and 12C27 both handle moisture well.
If you already own carbon steel
1095 and its relatives will patina, and a stable patina is protection rather than damage. Dry the blade before it goes away, oil it occasionally, and do not store it in the sheath long term. None of that is difficult — it just has to actually happen.
